Named after Eostre, the great mother goddess of the Northern European Saxons, and Eostra, or Ostara, the Teutonic goddess of fertility, Easter is the day to celebrate the resurrection of the earth's fertility.
The first Sunday following the full moon after the spring equinox is a time to honor the great mother goddess. Make a "great mother" omelet using common Easter symbols of resurrection from the mammal, fowl, and plant worlds.
Assemble some aged cheese, cream, with a pinch of salt and pepper. Pour into the pan. Add a huge handful of spinach, and aged cheese to taste. As the eggs cook, flip one side up and over the other, sealing the spinach in the middle. Cover and simmer for two minutes, and make toast. Today, eat reverentially, and know the world is reborn.
